A story of bread, belonging, and taking the time to make things properly.
How it all started…
2 Birds Baking began with a love of bread and the quiet, grounding process of making it by hand.
Baking has always been my thing. The feel of the dough, the slow rhythm of mixing, shaping, and waiting, it’s calming in a way that’s hard to explain unless you’ve felt it yourself. Working with dough gives me space to breathe, to think, and to feel grounded. It’s something I come back to again and again, especially during tougher seasons.
The early days…
In the early days, 2 Birds Baking lived in a small village hall kitchen. It was busy, messy, and often chaotic, trays everywhere, flour on everything, and never quite enough bench space. But it was also addictive. There was something incredibly satisfying about showing up, getting my hands in the dough, and letting the process carry me through the day.
What keeps me going now…
What kept me going then, and still does now, are the people.
The customers who come back for their favourite loaf. The comments about “proper bread.” The conversations at markets. The moments when someone tells me a bake reminded them of their Mum or Grandma. Those connections mean everything to me.
Everything I make is handmade, from scratch, using good ingredients and no shortcuts. I believe good bread doesn’t need to be complicated or full of additives to be special. It just needs time, care, and attention, and that’s exactly what I try to give every bake.
Looking ahead…
Looking ahead, 2 Birds Baking is about growing thoughtfully. Expanding the range, leaning into seasonal and creative bakes, and sharing what I’ve learned through classes and workshops, all while staying true to what matters most: small batches, honest food, and a strong connection to the community.
